This and That

Well, since it's been brought to my attention, I guess I'd better let you all know that Larry has had dinner since my last post! It just so happens that I made the same thing last night. I think I liked it better the first time. I'm not a kielbassa fan and the stuff I had yesterday was a little greasy.

Let's see, what's been going on since I last posted. All of the family on my side got together and had a family photo shoot at Michael and Megan's house. We had 19 in all. The photographer is a friend of my neice Gina and she was soooo nice. We had a great time. Megan made dinner afterward and everyone stayed and hung out. Megan made a stuffed meatloaf recipe that I got from Jeanine's MIL. You make your favorite meatloaf recipe (I use my meatball recipe) flatten in out on a piece of foil, put a layer of thinly sliced salami, a layer of provolone cheese and a layer of spinach (wilt it if it's fresh) roll it up like a jellyroll and seal well. Pour spaghetti sauce over and bake. The original recipe says to use Progresso tomato soup, which I like just as well. Delish either way.

Last Friday Michael, Megan, Paige and I headed out for Alabama. Megan's mom had had surgery and was recovering just fine, when she felt a terrible pain in her back and side, she ended up having a blood clot in her lung! She was in the hospital for over a week. Thank God she's doing fine and is on blood thinners for at least 6 months until the clot reabsorbs itself. What a scary thing for Megan to go through. She and her mom are very close, and it's so hard to be so far away from each other, especially when something like this happens. We left at 2:30 a.m. so that Paige would sleep through the first part of the trip. Well, Paige had other ideas. She stayed awake until 6 a.m. and then only slept for about an hour and a half. She then stayed awake the rest of the way until we were only about an hour from Megans mom's. Thankfully, she was very well behaved. She did really well. I got her a portable dvd player for the car (an early Christmas present). She LOVES her some "Melmo" and that kept her attention for a good while. Michael and I spent the night and got up the next morning to head back home. Let me just say 22 hours of driving in 2 days is a loooooong time to be in a car. I don't know how truckers do it! Megan and Paige are staying a few more days and then Michael will be headed back down to get them. What a good boy!!

I have a busy day of cleaning and baking pies today. I'll make 2 apple, 2 pecan 1 pumpkin, 1 coconut cream, and I usually make a berry, but my Mom bought a frozen strawberry - rhubarb pie from a church's fundraiser, so I'll just bake that up. Oh, and I have to make at least 1 pumpkin roll. I guess I'd better get started then!
